Simple Fall Dinner
Throw an effortless fall dinner for your friends this weekend with these easy tips!
Step one: head to the farmers market for some fresh fall blooms plus your groceries! In the fall you can usually find flowers that are not typically at your local grocery store. The flowers will make the perfect center piece for your table.
Next I found dried wheat and mini pumpkins at Trader Joe’s and spread them around the table to add some fall elements. The pumpkins also make a perfect fall apartment decoration after the dinner party is over.
Step two: time for the food! Stuffed pumpkins are so easy and make a big statement!
Ingredients:
4 Small Sweet pumpkins
1 1/2 cups of rice
1/2 lb of ground lamb (or ground beef)
1 yellow onion
2 teaspoons of all spice
1 teaspoon of cinnamon
2 minced garlic cloves
Salt and pepper to taste
Step 1: Preheat the oven to 400. Cut the tops off the pumpkins the same way you would to carve a jack-o-lantern and then scoop out all the seeds. Season inside with a little bit of olive oil and then salt and pepper to taste. Let roast on a pan with parchment paper for about 25-30 min.
Step 2: While the pumpkin is roasting cook the rice as normal. Chop up the onion and add it to a skillet with a little bit of olive oil. As the onion starts to get fragrant add in garlic and lamb. Season with salt pepper, all spice and cinnamon. Once the lamb is cooked through then add in the rice..
Step 3: Stuff the pumpkins with the lamb rice mixture and put back in the oven for about 15 min.
Step 4: Let cool and serve with Greek yogurt and parsley
Serve your guest each an individual pumpkin. The pumpkin makes a perfect bowl plus adds a delicious flavor to the rice.
Always end a dinner party with dessert! Tarts and pies are wonderful this time of year. I opted for individual tarts so no one feels uncomfortable sharing during this time of Covid.
